With three kids, specifically toddlers, healthy eating hasn’t been the easiest thing to accomplish these days. When I get the chance to spend the time needed to plan and prep meals, I am usually met with opposition from everyone when they sit at the table to eat. Trying new things isn’t really in my toddler’s vocabulary.
But in reality, I don’t want to give up. Eating healthy, making better choices, and providing my family with options they love that are healthy is really important to me! Often time it is too easy to pick up food to go, grab an unhealthy snack, or give in to the toddler’s reluctance to try new things. But I am realizing that healthy eating starts with me! Not only does healthy eating begin with me, but it can also be delicious!
There are simple ways that we can sneak in some delicious healthy meals into the diet of our family! It doesn’t have to be hard or take a lot of time, but it can make a huge difference!
One of my favorite ways to make healthy eating fun is with smoothies! Any time I make a smoothie, I sneak in as many veggies as I can and my kids never know the difference! It’s such a fun and easy way to sneak some veggies in and it’s a healthy choice all around. And to put a fun twist, you can even serve a smoothie in a bowl!
The best thing about smoothies is they can easily be changed up by mixing up the fruit you use. The recipe for the perfect smoothie is:
2 Cups Liquid
3 Cups Fruit
2 Cups Veggies
Ice
Protein (optional)

I have been attempting some new combinations with our smoothies, and since Raspberries have been a favorite of ours this season I decided to go for a raspberry banana spinach smoothie.
2 Cups Vanilla So Delicious Almondmilk with Cashews.
1 Banana
2 Cups Raspberries
2 Cups Spinach
Ice
Combine almond milk and spinach in blender. Blend until spinach is blended.
Add protein if applicable here. Blend until blended.
Add fruit. Blend until smooth.
Add ice to desired consistency.
Enjoy!
This is the perfect way to sneak in veggies with my kids, and we all love it! For smoothies, I use fresh spinach and make sure at least half of the fruit is frozen. If you want to serve your smoothie in a bowl, just reduce the liquid to about 1.5 cups and use only frozen fruit. Super simple to go back and forth between the two! The options are endless!
